Almond Butter, Jam, & Banana Cauli N'oatmeal

I know this recipe may sound strange and maybe not even very appetizing, but it tastes just like oatmeal. You can’t even tell it’s cauliflower. The cauli n’oatmeal is very versatile and you can top it with whatever your preference is. I used almond butter but feel free to use any nut butter you love. If you have been missing oatmeal because you don’t do well with oats, this recipe is for you. Even if you do well with oats, give this a try to get extra vegetables in.

Almond Butter, Jam, & Banana Cauli N'oatmeal

These n'oatmeal bowls are cauliflower-based, dairy-free, and Paleo but taste like oatmeal. They are creamy and the perfect way to start the day.

Ingredients
  • 1-10oz frozen cauliflower rice
  • 2 C full fat coconut milk
  • 2 tsp vanilla extract
  • 1 tsp cinnamon
  • 2 scoops collagen peptides
  • 2 T maple syrup
  • 2 bananas, sliced
  • 1/4 C sliced almonds, toasted
  • almond butter or nut butter of choice
  • raspberry jam or jam of choice

Instructions
  1. In a medium pot on medium heat, combine the cauliflower rice, coconut milk, vanilla, cinnamon, collagen, and maple syrup. Bring to a simmer and cook for 15-17 minutes, stirring occasionally to keep it from burning.
  2. The n’oatmeal should be thick and have the consistency of regular oatmeal when it’s finished cooking. Divide the n’oatmeal into two bowls.
  3. Top the n’oatmeal with sliced bananas, sliced almonds, almond butter, and jam.
  4. Enjoy for breakfast.
