Beef Tostadas

I stepped out of my normal Paleo box and made these tostadas. They are still grain-free, gluten-free, and dairy-free but I used beans. I have experimented with legumes and have found they don’t bother me. So, from time to time I incorporate them. I have so many food sensitivities, from nightshades to gluten, to cashews that when I do find something I can tolerate I go with it. I know legumes can be an issue for some people and if that is you, just leave them out of this recipe.

Beef Tostadas

These tostadas are gluten and grain-free, but you can not tell. With the help of Siete, they come together quickly and are delicious.

Ingredients
  • 1 lb. ground beef
  • 1/2 T chili powder
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp coriander powder
  • 1/8 tsp crushed red pepper
  • 1 tsp sea salt
  • 1 13oz can black beans
  • 1/2 C chicken broth
  • 6 Siete Tortillas
  • Siete Cheese Sauce
  • hot sauce of choice
  • lettuce, roughly chopped
  • cilantro, roughly chopped
  • 2 avocados, sliced
  • 1/4 C avocado oil

Instructions
  1. In a large sauté pan on medium heat, add the ground beef and break it up into small pieces.
  2. Add the chili powder, cumin, garlic powder, onion powder, smoked paprika, coriander, crushed red pepper, and 1/2 teaspoon sea salt. Mix the meat thoroughly and continue cooking until no pink remains.
  3. In a small saucepan add the black beans, chicken broth, and 1/2 teaspoon sea salt. Bring the mixture to a boil and use a potato masher to mash the beans, they should be fairly smooth but still have a few chunks. Once mashed, cook for 2-3 minutes, and remove from the heat.
  4. In a large skillet on medium heat add the avocado oil. Once the oil is hot, place the tortillas in the oil one at a time. Fry each side until golden brown and crispy. Place the tortilla on a cooling rack to drain any excess oil and repeat until all the tortillas are fried.
  5. Assemble the tostadas by smearing the tortillas with the beans, adding the ground beef, and topping with lettuce, Siete cheese sauce, hot sauce of choice, cilantro, and avocado.
  6. Enjoy!
