Carrot Ginger Dressing

This dressing has become a weekly staple in my house since I created it. Every Sunday, I make a batch to have throughout the week. It’s perfect for salads, a dipping sauce, or adding to eggs.

Carrot Ginger Dressing

This dressing is Whole30 and Paleo-friendly. It requires minimal ingredients and is bright and flavorful.

Ingredients
  • 1/3 C avocado oil
  • 1/3 C rice vinegar
  • 1 T minced ginger root
  • 2 garlic cloves, minced
  • 2/3 C shredded carrots
  • 1 T lime juice
  • 2 dates, soaked in boiling water for 10 minutes
  • 1/2 tsp sea salt
Instructions
  1. Soak the dates in boiling water for 10 minutes. Remove the dates and discard the water.
  2. Add all the ingredients for the dressing to a high-speed blender and blend until the mixture is smooth and creamy.
  3. Store in an air-tight container in the refrigerator for up to 2 weeks.
