Everything Burnt Broccoli

I’m reluctant to call this a recipe, but so many people I’ve talked to have never heard of or tried burnt broccoli. This is my favorite way to eat broccoli. It changes the flavor slightly and gives it a little crunch. Once you try broccoli this way, you won’t go back. I use duck fat to roast the broccoli. It gives it a slightly different flavor than other cooking fats and I love it. If you don’t have duck fat or can’t find it at the store, go ahead and swap it out with whatever good fat you have on hand.

Everything Burnt Broccoli

Burnt broccoli is the best way to enjoy the vegetable. It changes everything and makes it hard to stop eating. This version is Whole30 and Paleo compatible.

Ingredients
  • 8 C broccoli florets
  • 1/4 C duck fat or ghee, melted
  • 1 1/2 T everything bagel seasoning

Instructions
  1. Preheat the oven to 400 degrees. Line a baking sheet with parchment paper.
  2. In a large bowl, toss the broccoli with the duck fat and everything bagel seasoning. Make sure to mix everything well so the fat and seasoning are evenly distributed.
  3. Spread the broccoli in a single layer on the sheet pan. Place in the oven and bake for 35-40 minutes. The broccoli should be slightly charred when it’s done.
  4. Enjoy right away. This isn’t as good the next day so it’s best to eat it the same day you cook it.
