Filet Mignon with an Herb Compound Butter

Filet mignon is a special treat we rarely get to enjoy. I partnered with one of my favorite beef companies, Pre, and they sent me a box of various cuts of beef, which included filet mignon. I don’t like to add a lot to filet; I prefer the flavor of the meat to shine through. These are topped with an easy compound butter that can easily be adjusted to use whatever herbs you have or enjoy.

This is an easy and flavorful way to enjoy filet mignon.

Ingredients
  • 1 stick salted butter, at room temperature
  • 2 garlic cloves, minced
  • 2 T fresh thyme
  • 1 T minced parsley
  • 1/2 lemon zested
  • 4-5oz filet mignon
  • sea salt
  • pepper
Instructions
  1. In a small bowl, add the butter, garlic, thyme, parsley, and lemon zest. Mix thoroughly to combine well.
  2. Add the butter mixture to a piece of parchment paper and form a log. Twist each end shut and place in the refrigerator for at least 8 hours.
  3. Pat your filet mignon dry and generously season with salt and pepper on both sides. Let the steak rest for about 30 minutes, allowing it to come to room temperature.
  4. Place your filets face down on the grill or grill pan and sear for 5 minutes. Turn the filet a quarter turn and continue searing for 3 minutes.
  5. Flip the filet and repeat the process. This will give you a medium-rare steak. Cook longer for more well done.
  6. Remove the steaks from the grill and allow them to rest for 5 minutes before serving.
  7. Top each steak with a generous slice of the herb compound butter and enjoy.
