Garlic Parsnip Puree

Have you eaten parsnips before? I find many people have never tried them. They are delicious root vegetables and look like a white carrot. I like to add them to any pan of roasted veggies because they add a different flavor profile. For this recipe, you simmer them in coconut milk and puree them. They create a velvety smooth puree with a nutty flavor.

Garlic Parsnip Puree

Using parsnips for a puree base is a fun way to switch up a mashed potato side. Parsnips are creamy, flavorful, and so delicious. This side dish is Whole30 and Paleo compatible.

Ingredients
  • 1 lb. parsnips, peeled and cut into 2-inch pieces
  • 1 C coconut milk
  • 2 garlic cloves, minced
  • 1 1/4 tsp sea salt
  • 1 T ghee

Instructions
  1. In a medium saucepan on medium heat,  add the parsnips, coconut milk, garlic, salt, and ghee. Bring the mixture to a boil, place a lid on the pan, and reduce the heat to low.
  2. Simmer until the parsnips are tender, about 10-15 minutes.
  3. Puree the parsnip and coconut milk mixture with an immersion blender or in a high-speed blender.
  4. Serve as a side dish to any meal.
