Hidden Veggie Chicken Bites

I’ve shared about my husband’s diet before, but it hasn’t gotten any better. He prefers to eat fast food, and I have a tough time finding vegetables he will eat. I try to develop some recipes that hide veggies or make it seem like you’re not eating a lot of them, hoping that I can get something nutritious in his body. While creating these chicken bites, he was very interested because the entire house smelled delicious. He had a few bites and was hooked; they were a winner. You can see the green from the zucchini a little bit but can’t taste it at all. Yellow squash would work well also. Be sure you are squeezing as much liquid as possible out of the zucchini to ensure they do not get soggy and hold up in the cooking process.

Hidden Veggie Chicken Bites

These little chicken bites are delicious and won't last long in your house. I included instructions for cooking them in the air fryer and oven. Added bonus- they are Whole30, paleo, and AIP compatible.

Ingredients
  • 1 lb ground chicken
  • 1 small zucchini, shredded (about 2 cups)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp sea salt
  • 1/4 tsp black pepper (omit for AIP)
  • 1/2 tsp Italian seasoning
Instructions
  1. Use cheesecloth or a clean towel to squeeze the liquid out of the shredded zucchini. Try to squeeze as much liquid out as possible.
  2. In a medium bowl, add the ground chicken, zucchini, garlic powder, onion powder, sea salt, pepper, and Italian seasoning. Mix everything until it’s thoroughly combined.
  3. Use a spring-loaded cookie scoop to form balls of the chicken mixture. Flatten the balls to form an oval, nugget shape.
  4. For the air fryer: place the chicken bites in a single layer and cook at 400 degrees for 6-7 minutes. The chicken should be fully cooked and have a golden-brown color.
  5. For the oven: preheat to 400 degrees. Place the chicken bites on a parchment-lined sheet pan and bake for 12-15 minutes. The chicken will be cooked through, but it won’t have the golden-brown color they get in the air fryer.
  6. Serve with your favorite dipping sauce.
