Instant Pot Balsamic Beef

Nothing is easier than throwing a few ingredients into an Instant Pot, setting the timer, and continuing with our busy lives. In an hour you will have a dinner that is full of flavor, and meat so tender it just falls apart. Adding balsamic vinegar to this roast changes the flavor from your typical pot roast to something that will make your taste buds do a happy dance.

Instant Pot Balsamic Beef

This Whole30 and Paleo compatible Instant Pot recipe jazzes up the typical pot roast with the bright flavor of balsamic vinegar. This recipe makes great leftovers.

Ingredients
  • 3 lbs. beef shoulder roast
  • 5 garlic cloves, minced
  • 1 large yellow onion, cut into 1-2 inch chunks
  • 3 C beef broth
  • 1/2 C balsamic vinegar
  • 1 1/2 tsp sea salt
  • 2 T Italian seasoning
  • 6 carrots, peeled and cut into 1-inch pieces
  • 1 1/2 lbs. baby potatoes

Instructions
  1. In an Instant Pot, add the onions, garlic, broth, vinegar, salt, and Italian seasoning. Mix it so everything is combined.
  2. Add the shoulder roast and then add the carrots and potatoes. Lock the lid in place and set the Instant Pot on pressure cook high for 60 minutes.
  3. Once the timer goes off, manually release the pressure. Remove the roast, potatoes, and carrots. Set the Instant Pot on sauté for 15 minutes. This will reduce the liquid and allow the flavors to be more bold.
  4. Serve the roast with the carrots, potatoes, and cooking liquid.
