I’ve had my Instant Pot for years now and I still love it. It can make life so much easier and dinner a breeze to get on the table. This sesame orange chicken is a perfect weeknight meal. You can get the sauce together the night before and then throw everything in the pot after work, in under 10 minutes dinner will be ready.

Ingredients
  • 2 lbs. chicken breast, 1-inch dice
  • 2 1/2 C orange juice
  • 1/2 C coconut aminos
  • 2 tsp sesame oil
  • 1/2 C honey
  • 1 tsp fish sauce
  • 2 T rice vinegar
  • 3 garlic cloves, minced
  • 1 tsp powdered ginger
  • 1 tsp onion powder
  • 1 T tapioca flour
  • 1 T water
  • sesame seeds for garnish

Instructions
  1. In a medium bowl whisk the orange juice, coconut aminos, sesame oil, honey, fish sauce, rice vinegar, garlic, ginger powder, and onion powder.
  2. Placed the diced chicken in the Instant Pot with the sauce. Stir everything until it’s well combined. Place the lid on the Instant Pot and lock it into place. Use the manual button and set it to high with the timer for 8 minutes.
  3. Once the timer goes off, manually release the pressure. Remove the chicken, making sure to leave the sauce in the pot. Set the pot to sauté, this should bring the sauce to a boil. In a small dish whisk the tapioca flour and the water together. Once the sauce is boiling, whisk the tapioca and water mixture into the sauce.
  4. Continue boiling the orange sauce for about 5 minutes. Pour the sauce over the chicken, top with sesame seeds, and serve with cauliflower rice.
