Paleo Bacon Cheeseburger Casserole

This casserole is topped with a dairy-free cheese sauce that is super easy to make and only requires 5 ingredients. It makes a great meal prepping dish and also freezes well. Be sure to check the ingredients of the frozen hash browns because that is a product that tends to have a lot of additives snuck into it.

A few years ago, I had a small meal prep side hustle while we lived in Missouri. I would create different menus each week for my clients to choose what they would like to eat. Each week was a different menu, and I would occasionally repeat popular meals. Every time I would add this casserole to the menu, I would sell out within an hour. I had nightmares about having to make four-gallon batches of this cheese sauce. I forgot about this casserole until an old client reached out and asked for the recipe. So here it is.

Paleo Bacon Cheeseburger Casserole

This casserole is topped with the creamiest, dairy-free cheese sauce and makes a great meal prep recipe. It's Whole30 and Paleo compatible.

Ingredients
  • 2 large sweet potatoes
  • 12oz bacon
  • 16oz frozen shredded hash browns
  • 2 T avocado oil
  • 2 lbs. ground beef
  • 4 tsp sea salt
  • 1/4 tsp black pepper
  • 1 1/2 tsp garlic powder
  • 1 tsp onion powder
  • 2 1/2 C full fat coconut milk (from the can, not carton)
  • 1 C nutritional yeast
  • 1/4 C lemon juice
Instructions
  1. Preheat the oven to 400 degrees and line a sheet pan with parchment paper.
  2. Place the sweet potatoes on the sheet pan and drizzle them with 1 tablespoon of avocado oil. Rub the avocado oil on the potatoes to cover them entirely. Place them in the oven and bake for 45-50 minutes.
  3. Line another sheet pan with parchment paper and lay the bacon in a single layer on the pan. Place in the oven and cook for 15-17 minutes. The bacon should be crispy when it has finished cooking.
  4. Add the frozen hash browns to a 9x9 baking dish and place it in the oven for 17 minutes. When the hash browns are done, set them aside.
  5. In a large sauté pan on medium heat, add 1 tablespoon of avocado oil and the ground beef. Break the beef into small pieces and continue cooking until it’s no longer pink.
  6. Drain any excess fat from the pan. Add 1 ½ teaspoon of sea salt, pepper, garlic powder, and onion powder. Stir to combine everything.
  7. Spread the cooked ground beef evenly over the warmed hash browns and press everything down in the pan. Set it aside.
  8. Remove the skins from the sweet potatoes and place the potatoes in a medium bowl.
  9. Add the coconut milk, lemon juice, nutritional yeast, and 2 ½ teaspoons of sea salt. Blend using an immersion blender until the cheese sauce is smooth and creamy.
  10. Pour the cheese sauce over the ground beef and place in the oven to bake for 25 minutes.
  11. Roughly chop the bacon and when the casserole has finished baking, sprinkle it over the top.
  12. Enjoy!
