Roasted Cauliflower with Pine Nuts & Raisins

It’s probably clear by now that I love vegetables and think it’s important to get them in with every meal. So here is another recipe that is easy, flavorful, and will please even the pickiest of eaters. The cauliflower is roasted with raisins, pine nuts, garlic, and a little lemon juice. The flavors complement each other- the sweetness of the raisins with the earthy flavors of the pine nuts are a match made in heaven.

Roasted Cauliflower with Pine Nuts & Raisins

This side dish is flavorful and easy. The pine nuts add a crunch and the raisins add a touch of sweetness. This recipe is Whole30 and Paleo compatible.

Ingredients
  • 1 head cauliflower, cut into florets
  • 3 garlic cloves, minced
  • 1/2 C raisins
  • 2 T pine nuts
  • 1 T lemon juice
  • 1 T ghee
  • 1/2 tsp sea salt
  • 1/4 tsp cracked black pepper
  • parsley for garnish

Instructions
  1. Preheat the oven to 400 degrees. Line a baking sheet with parchment paper.
  2. In a small bowl, soak the raisins in boiling water for 10 minutes. Discard the water after the raisins are done soaking.
  3. In a large bowl toss the cauliflower florets, garlic, soaked raisins, pine nuts, lemon juice, ghee, salt, and pepper. Make sure everything is evenly coated with the ghee and then spread the cauliflower mixture in a single layer on the parchment lined sheet pan. Place in the oven and roast for 30-35 minutes. Cauliflower should be tender when it’s done.
  4. Sprinkle with parsley and serve.
