Sesame Asparagus & Mushrooms

We all know vegetables are important and we need to eat more, but a lot of the time that just doesn’t happen. Life is busy, we get overwhelmed, and vegetable kind of go to the side. For this reason, I am getting the blog loaded with various easy, flavorful vegetable recipes. These recipes are going to have minimal ingredients, come together quickly, and be crowd-pleasers. We are starting this mission with this asparagus recipe.

Sesame Asparagus & Mushrooms

This asparagus dish combines shiitake mushrooms, fresh ginger and garlic, sesame oil, and coconut aminos. It's Whole30 and Paleo compatible.

Ingredients
  • 1 lb. asparagus, cut into 2-inch pieces
  • 5oz shiitake mushrooms, stems removed and sliced
  • 4 garlic cloves, minced
  • 1 T minced ginger root
  • 1 1/2 tsp sesame oil
  • 3 T coconut aminos
  • 1/2 tsp sea salt
  • 1 T ghee

Instructions
  1. In a large sauté pan on medium-low heat, add the ghee. Once the ghee has melted add the garlic and ginger. Sauté for 1-2 minutes, stirring occasionally to prevent it from burning.
  2. Turn the heat to medium and add the mushrooms, asparagus, and 1/2 C water. Continue cooking until the water has evaporated.
  3. Add the coconut aminos, sesame oil, and sea salt. Cook an additional 2-3 minutes, stirring occasionally. The asparagus and mushrooms should be fully cooked.
  4. Serve as a side dish to any meal.
