Air Fryer Chocolate Chip Cookie Cups

This recipe makes two cookie cups that are gluten-free and paleo.

Ingredients

  • 3 T butter or palm shortening, softened
  • 1/4 C coconut or maple sugar
  • 1/4 tsp sea salt
  • 1 egg, at room tempurature
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/2 C Paleo Flour Mix, I used Bob's Red Mill
  • 1/4 C chocolate chips

Instructions

  1. In a medium bowl or the bowl of a stand mixer, cream together the butter and coconut or maple sugar.
  2. Mix in the salt, egg, and vanilla extract.
  3. Next, mix in the paleo flour and baking powder.
  4. Fold in the chocolate chips.
  5. Grease two ramekins
  6. Divide the cookie dough evenly between the two ramekins.
  7. Place the ramekins in the air fryer and cook at 325 degrees for 14-16 minutes.
