Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1/2 C tapioca flour
  • 1/4 tsp sea salt
  • 1 egg
  • 1 T water
  • 1 1/2 C unsweetened coconut flakes
  • 1/4 C honey
  • 2 T coconut aminos
  • 2 garlic cloves, minced
  • 1 T lime juice

Instructions

  1. Pat the shrimp dry with a paper towel and sprinkle with the sea salt. Set up a breading station with three bowls. In the first bowl, add the tapioca flour; in the second bowl, whisk the eggs with the water; in the third bowl, add the coconut flakes.
  2. Start with the shrimp in the tapioca flour and move through the following two stations. It’s best only to do a couple of shrimps at a time. After removing them from the coconut station, set them on a clean plate and continue the process until all the shrimp are breaded.
  3. Place the breaded shrimp in the air fryer's basket; you will probably need to cook them in 2-3 batches, depending on the size of your air fryer. Cook the shrimp at 360 degrees for 10-12 minutes.
  4. While the shrimp cooks, add the honey, coconut aminos, minced garlic, and lime juice to a small saucepan and bring to a boil, remove the sauce from the heat and set it aside.
  5. Once the shrimp is cooked, drizzle them with the sauce and serve.
