Citrus Thyme Jam

Finding a jam without added processed sugar is difficult, so I made this jam with honey as the sweetener. It's Paleo and refined sugar-free.

Ingredients

  • 8 mandarin oranges
  • 4 red grapefruit
  • 1 lime
  • 1 lemon
  • 1 3/4 C honey
  • 1 1/2 T fresh thyme

Instructions

  1. Peel the mandarin oranges and thinly slice them. Place them in a medium pot.
  2. Start with the grapefruit and segment them. Cut the ends off and next, you will trim away the skin and pith by using a knife. Start at the top and slice downwards, following the curve of the fruit. Try to cut away all the skin and pith without taking too much of the fruit.
  3. Once all the skin and pith are removed, you will segment the fruit pieces out. Slip the knife between one of the segments and the membrane. Repeat on the other side of the segment. Continue this process until you have the whole fruit segmented. Squeeze any excess juice from the remaining membrane into the pan. Continue this process with all the grapefruit, lemon, and lime.  
  4. Add the honey and the thyme to the pan with the fruit and juices.
  5. Place the pot on the stove and bring it to a boil. Reduce the heat and continue simmering for about 2 hours, stirring every 10-15 minutes.
  6. Once the jam is done reducing, remove from the heat and let cool to room temperature. Place in a jar in the fridge. Can be kept for about a month.
