Easy Roasted Vegetable Medley

This is an easy side dish that combines a variety of veggies and roasts them to perfection. Perfect for meal prep, and it's Whole30 and Paleo compatible.

Ingredients

  • 1 asparagus bundle, cut into 2-inch pieces (about 4 cups)
  • 1 large carrot, cut into 1/4-inch-thick coins
  • 1 large parsnip, cut into 1/4-inch-thick coins
  • 1 medium zucchini, sliced in half, and then 1/2-inch-thick pieces
  • 1/2 small yellow onion, large dice
  • 3 garlic cloves, minced
  • 2 T ghee, melted
  • 1/2 lemon, juiced
  • 1 tsp Italian seasoning
  • 1 tsp sea salt

Instructions

  1. Preheat the oven to 400 degrees and line a sheet pan with parchment paper. Depending on the size of the sheet pan, you may need 2.
  2. In a medium bowl, toss all the ingredients together and spread them on the sheet pan in a single layer.
  3. Place in the oven and roast for 30-35 minutes. Vegetables should be soft when they are cook through.
