Garlic Herb Carrots

Easy, flavorful side dishes are my favorite. This recipe has minimal ingredients and comes together quickly.

Ingredients

  • 6 medium to large carrots, peeled and sliced into coins
  • 2 T olive oil
  • 1 tsp sea salt
  • 3 garlic cloves, minced
  • 1 1/2 tsp fresh thyme
  • 1 1/2 tsp roughly chopped chives

Instructions

  1. In a medium sauté pan on medium heat, add the olive oil and carrots and mix thoroughly. Cover the pan and cook for 5 minutes.
  2. Uncover the pan and add the garlic, sea salt, thyme, chives, and oregano. Continue cooking for 3-5 minutes, occasionally stirring until the carrots are tender.
