Garlic & Onion Beef with Cauli Rice

This is a great dish for busy weeknight meals. It comes together quickly, and it is delicious. Did I mention it's Paleo and Whole30 compatible!?!

Ingredients

  • 2-10oz bags frozen cauliflower rice
  • 1/2 C chicken broth
  • 1/2 C full fat coconut milk
  • 3 T minced ginger root
  • 12 garlic cloves, minced
  • 1/2 C yellow onion, small dice
  • 2 lbs. ground beef
  • 1/4 C + 2 T coconut aminos
  • 1/2 C cilantro, roughly chopped
  • 1 tsp sea salt
  • 1 T ghee
  • 2 tsp rice vinegar

Instructions

  1. In a medium saucepan on medium heat, add the cauliflower rice, chicken broth, coconut milk, 4 minced garlic cloves,  1 tablespoon minced ginger root, and 1/2 teaspoon sea salt. Simmer for 30 minutes or until most the liquid has evaporated.
  2. In a large sauté pan on low heat add the ghee, onion, 2 tablespoons minced ginger, and 8 minced garlic cloves. Sauté until the mixture is fragrant, about 5 minutes.
  3. Add the beef and break it up into small pieces. Turn the heat to medium and add 1/2 teaspoon sea salt and cook until the beef is no longer pink. Drain any excess fat from the pan.
  4. Add the coconut aminos, cilantro, and rice vinegar. Stir to combine and continue cooking an additional 3-4 minutes.
  5. To serve add the cauliflower rice to a bowl or plate and top with the beef. Enjoy.
