Garlic Roasted Cauliflower

Cauliflower is an easy side dish to make and can take on a variety of flavors. This recipe is for garlic lovers. It's also Whole30 and Paleo compatible.

Ingredients

  • 1 head of cauliflower
  • 1 T avocado oil
  • 5 garlic cloves, minced
  • 1 T fresh thyme
  • 1/2 tsp sea salt
  • 1/4 tsp cracked black pepper
  • 1 T lemon juice

Instructions

  1. Preheat the oven to 400 degrees and line a sheet pan with parchment paper. Cut the cauliflower into medium sized florets and place them in a medium bowl.
  2. Toss the cauliflower florets with avocado oil, garlic, thyme, sea salt, pepper, and lemon juice. Spread the cauliflower on the sheet pan in a single layer.
  3. Place the sheet pan in the oven and roast for 30-35 minutes. The cauliflower should be fully roasted and a little charred.
  4. Serve as a side dish to any meal.
