  1. In a medium bowl, whisk together the coconut milk, honey, lemon zest, lemon juice, chia seeds, vanilla, and sea salt.
  2. Cover and refrigerate for 8 hours or overnight.
  3. After the chia seed pudding has set, assemble the parfaits by adding a layer of Greek yogurt at the bottom of the jar, then a layer of granola, and blueberries. Next, add a layer of the chia seed pudding, more granola, and blueberries.
  4. Continue until the jars are full and topped with granola and blueberries.
