Paleo Pasta Salad

This paleo pasta salad is made with Jovial cassava pasta, veggies, and Italian vinaigrette. It's perfect for summer and BBQs.

Ingredients

  • 2-8oz boxes of Jovial cassava fusilli
  • 4oz pepperoni
  • 1 C sliced black olives
  • 1 C diced cucumbers
  • 1 C diced bell pepper
  • 1 green onion, thinly sliced
  • 1 C shredded carrots
  • 1/4 C + 2 T small diced red onion
  • 2 C broccoli, cut into very small florets
  • 2 C cauliflower, cut into very small florets
  • 1-10oz bottle Tessemae’s Italian Vinaigrette

Instructions

  1. Prepare the pasta following the directions on the box. When the pasta is fully cooked, drain the noodles and rinse in cold water. Set aside
  2. In a large bowl add the pepperoni, olives, cucumbers, bell peppers, green onion, red onion, broccoli, and cauliflower. Toss everything together to thoroughly combine.
  3. Add the cooked pasta in and mix well.
  4. Right before serving, add the Tessemae’s vinaigrette and mix well, ensuring all ingredients are coated in the dressing.
