Paleo Pumpkin Spice Soft Sugar Cookies

These cookies are Paleo and gluten-free. They are soft with just the right amount of pumpkin spice seasoning. Perfect for fall.

Ingredients

  • 3/4 C palm shortening or grass-fed butter
  • 1 C maple sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 T pumpkin spice
  • 1/2 tsp baking powder
  • 1/2 tsp sea salt
  • 1 C almond flour
  • 1/4 C coconut flour
  • 3/4 C cassava flour

Instructions

  1. In a large bowl or the bowl of a stand mixer, add the shortening and maple sugar. Using a hand mixer or a stand mixer, beat the shortening and sugar until it’s smooth.
  2. Add in the vanilla and egg and continue mixing until everything is fully combined. Scrape down the sides of the bowl as needed.
  3. In a small bowl whisk together the almond flour, coconut flour, cassava flour, pumpkin spice, baking powder, and sea salt. Slowly add the flour mixture to the shortening mixture and continue beating until fully combined.
  4. Refrigerate the dough for 1 hour. Preheat the oven to 375 degrees.
  5. Use a spring-loaded cookie scoop to form balls and place them on a parchment-lined sheet pan. Once all the dough is in ball form, use a spatula to press the dough down and flatten the balls. They will be about 1/2-3/4 inch thick.
  6. Place the sheet pan in the oven and bake the cookies for 12-14 minutes. The cookies will be light in color when they are done.
