Pancetta Balsamic Brussels Sprouts 
These brussels sprouts are super easy but very flavorful. They are Paleo compatible and gluten-free.

Ingredients
- 1 1/2 lbs brussels sprouts, ends trimmed and sprouts sliced in half
 - 1 T avocado oil
 - 2 T balsamic vinegar
 - 2 T maple sugar
 - 1 tsp sea salt
 - 1/4 tsp black pepper
 - 2oz pancetta, medium dice and 1/2 inch thick
 
Instructions
- Preheat the oven to 350 degrees and line a sheet pan with parchment paper.
 - In a large bowl, toss the brussels sprouts, avocado oil, vinegar, maple sugar, salt, pepper, and pancetta. Continue tossing until the ingredients are thoroughly combined.
 - Spread the brussels sprouts onto the sheet pan in a single layer and place them in the oven to roast for 35-40 minutes.
 - The brussels sprouts and pancetta should be cooked through and slightly browned when done.
