Shaved Brussels Sprout Salad

This is a fun and delicious way to get vegetables in. The Brussels sprouts are tossed with apple, hazelnuts, and an easy vinaigrette. It's Paleo and gluten-free.

Ingredients

  • 1/2 C olive oil
  • 2 tsp honey
  • 2 T lemon juice
  • 1/2 tsp sea salt
  • 4 C shaved brussels sprouts
  • 1 pink lady apple, cored and small dice
  • 1/3 C hazelnuts, toasted
  • 1/4 C minced red onion

Instructions

  1. In a small bowl, whisk the olive oil, honey, lemon juice, and sea salt thoroughly.
  2. In a medium bowl, toss the shaved brussels sprouts, apple, hazelnuts, and onion. Drizzle the olive oil dressing over the salad and mix well.
  3. Enjoy! Store any extra in the refrigerator for up to 3 days.
