Sirloin Steak & Vegetables

This is an easy, one-pan meal that uses thinly sliced steak, vegetables, and steak seasoning. It's Whole30 and Paleo compatible.

Ingredients

  • 1 lb. sirloin steak, thinly sliced against the grain*
  • 1 small yellow onion, thinly sliced
  • 4 garlic cloves, minced
  • 1 large zucchini, cut in half, and then sliced in 1/4-inch-thick pieces
  • 8oz mushrooms, sliced
  • 3oz shiitake mushrooms, stems removed and sliced
  • 4 T avocado oil
  • 2 tsp salt-free Herbed Paleo Powder
  • 2 tsp sea salt (omit if using a seasoning blend that contains salt)

Instructions

  1. In a large skillet pan on medium heat, add 2 tablespoons of avocado oil. Once the pan is hot add the steak, 1 teaspoon salt, and 1 teaspoon Paleo Powder or seasoning of choice. Sauté for about 2-4 minutes and remove the beef from the pan and set aside.
  2. Add 2 tablespoons avocado oil to the pan along with the mushrooms, onion, garlic, zucchini, 1 teaspoon sea salt, and 1 teaspoon Paleo Powder. Continue cooking for 7-10 minutes, stirring occasionally. Vegetables should be cooked through.
  3. Add the beef to the pan with the vegetables and lightly stir everything together. Continue cooking for a few more minutes, just until the beef is hot.
  4. Remove from the heat and enjoy!

*You want to slice the steak as thin as you can, you do not want think slices of meat.
