Southwest Turkey Bites with a Creamy Cilantro Dipping Sauce

This recipe works great for meal prep because the turkey bites store well in the fridge and reheat easily. These turkey bites are also Whole30 and Paleo compatible.

Ingredients

• 2 lbs ground turkey
• 3 garlic cloves, minced
• 2 tsp cumin
• 1 1/2 tsp onion powder
• 1 1/2 tsp sea salt
• 1-4oz can green chilis, drained
• 1/3 C cilantro, chopped

• 1 C avocado oil
• 1 egg
• 1 tsp Dijon mustard
• 1/4 tsp sea salt
• 1 garlic clove, minced
• 1 T lime juice
• 1/3 C cilantro

Instructions

1. Preheat the oven to 400 degrees. Combine the ground turkey, 3 minced garlic cloves, cumin, onion powder, 1 1/2 teaspoons sea salt, green chilis, and 1/3 cup cilantro in a bowl and mix thoroughly.

2. Using a spring-loaded ice cream scoop, begin making turkey meatballs and place them on a parchment-lined baking sheet. Press each meatball flat with the back of a spatula until you have round disks.

3. Place the baking sheet in the oven and bake for 15 minutes.

4. Place the avocado oil, egg, Dijon mustard, 1/4 teaspoon sea salt, 1 minced garlic clove, and lime juice in a jar just slightly larger than your immersion blender.

5. Place immersion blender in the jar at the bottom. Start blending, keeping the blender at the bottom of the jar for 10 seconds then slowly move the blender up until mixture is fully emulsified.

6. Add the cilantro and blend until everything is mixed thoroughly.

7. Serve the turkey bites with the cilantro dipping sauce.
