Air Fried Brussels Sprouts & Bacon

I am in love with burnt brussels sprouts. When people say they hate brussels sprouts, I think they just haven’t had them prepared properly. I probably eat them 3-4 times a week. I might have a problem. I paired these brussels with my basil aioli for a dipping sauce. Give them a try.

Ingredients
  • 1 1/2 lbs. brussels sprouts, quartered
  • 5 pieces of bacon, diced (uncooked)
  • 3/4 tsp sea salt
  • 1 C avocado oil or extra light tasting olive oil
  • 1 egg
  • 1 tsp Dijon mustard
  • 2 tsp apple cider vinegar
  • 2 garlic cloves, minced
  • 1/3 C fresh basil, roughly chopped

Instructions
  1. Place the brussels sprouts in the basket of your air fryer and sprinkle with 1/2 teaspoon of sea salt. Evenly sprinkle the diced bacon over the brussels sprouts.
  2. Return the basket to the fryer and cook at 400 degrees for 20 minutes. Every 6 minutes take the basket out and shake the brussels sprouts and bacon around to ensure even cooking.
  3. For the basil aioli, place the avocado oil, egg, Dijon mustard, apple cider vinegar, garlic, and 1/4 teaspoon of sea salt in a jar just slightly larger than your immersion blender.
  4. Place the immersion blender in the jar all the way to the bottom. Start blending, keeping the blender at the bottom of the jar for 10 seconds, and then slowly move the blender up until the mixture is fully emulsified.
  5. Remove the blender and add the chopped basil. Stir the basil into the aioli with a spoon until fully combined.
  6. Serve the brussels sprouts with the basil aioli.
