Bagels & Lox Deviled Eggs

These eggs are so tasty! The smoked salmon and Everything Bagel seasoning to the deviled eggs is a match made for each other. This is a quick appetizer or snack that looks fancy, but it is easy and comes together quickly. I’ve included both Instant Pot and stovetop directions for cooking the eggs. If you have an Instant Pot, I recommend using it. It makes peeling the eggs easy. The shell slides right off.

Bagels & Lox Deviled Eggs

These deviled eggs make a great snack or appetizer to bring to a get-together or bbq. They are also Whole30 and Paleo compatible.

Ingredients
  • 12 eggs
  • 1/2 C plus 2 T mayonnaise- homemade or Primal Kitchen
  • 1 T Dijon mustard
  • 2 tsp apple cider vinegar
  • 1/4 tsp sea salt (omit if using Primal Kitchen mayo)
  • 1 garlic clove, minced
  • 2oz smoked salmon
  • chives, minced
  • Everything Bagel Seasoning

Instructions
  1. If you are going to use an Instant Pot for cooking your eggs, get it out and place the steamer basket and 1 cup of water in the pot. Arrange the eggs on the steamer basket. Lock the lid in place, check the valve to ensure it’s sealed, and pressure cook on high for 7 minutes.
  2. If you are going to use the stovetop method, place the eggs in a pot of boiling water for 10 minutes. Once your eggs are cooked, place them in an ice bath to cool.
  3. Once the eggs have cooled, peel and slice them in half. Add the yolks to a small bowl along with mayonnaise, Dijon mustard, apple cider vinegar, garlic, and sea salt. Mash everything together with a fork, or use an immersion blender to combine everything. You want the yolk mixture to be smooth.
  4. Spoon or pipe* the yolk mixture into the egg white potion. Top each egg with a piece of smoked salmon, chives, and sprinkle with Everything Bagel seasoning.

*You can fill a Ziplock bag with the yolk mixture and cut off one corner for a makeshift piping bag.
