Beets and goat cheese are one of those pairings that were made for each other. Each ingredient by itself is delicious, but when you put them together you get something you’ll want to eat again and again. The vinaigrette for this salad is made with white balsamic vinegar to keep the dressing light and fruity. You will also have more candied walnuts than you need for the salad, but I don’t think that’s a bad thing.
