I used to meal prep for a side gig. I would make a Paleo cheeseburger casserole that my clients were obsessed with. Anytime I ran that on the menu, I would sell out within the hour. I would then be up to my elbows in a vegan cheese sauce over the weekend while preparing the meals for my clients. Since it is officially Fall, I decided to make a soup version of that casserole. This recipe did not disappoint. It’s thick and creamy, full of vegetables, and tastes like it contains real cheese. Your taste buds will do a happy dance.
This cheeseburger soup is dairy-free but tastes like it is made with traditional cheese. It's also Whole30 and Paleo compatible.
