Garlic Broccolini & Capers

Broccolini is a fun way to switch up the veggies you are eating. It’s more delicate and slightly sweeter than regular broccoli. It also has a similar flavor to asparagus.

I’ve been on a caper kick lately and have been adding it to various recipes. They add a brine flavor and help to bring brightness to this vegetable side dish.

Garlic Broccolini & Capers

This side dish is Whole30 and Paleo compatible. It requires minimal ingredients but has a bright, bold flavor.

Ingredients
  • 3 bunches broccolini
  • 4 garlic cloves, minced
  • 2 T olive oil
  • 2 T capers, drained
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1/2 T red wine vinegar
Instructions
  1. Preheat the oven to 400 degrees and line a baking sheet with parchment paper.
  2. In a medium bowl, toss the broccolini with garlic, olive oil, capers, sea salt, and pepper. Be sure to thoroughly mix everything so it’s evenly distributed.
  3. Spread the broccolini in a single layer on the baking sheet and place in the oven to roast for 15-20 minutes. The broccolini should be tender and slightly charred when it’s done cooking.
  4. Toss the broccolini in the red wine vinegar and serve.
