Garlic Green Beans & Bacon

I’ve shared before about my husband’s diet and how hard it is to get anything remotely nutritious in him. He doesn’t really try anything I cook and eats mostly junk. He’s doing a January Whole30, and I know green beans are one vegetable I can sometimes get him to eat. Since creating this recipe, he has asked me to make these multiple times. If he eats it, I know it must be a good recipe.

Garlic Green Beans & Bacon

Green beans are a fun vegetable that you can do so many different things with. This dish is garlicky and has a smoky flavor from the bacon. It's also Whole30 and Paleo compatible.

Ingredients
  • 12oz green beans
  • 8 garlic cloves, minced
  • 5 slices bacon, diced
  • 1/2 tsp sea salt
  • 1/4 tsp pepper
  • 1 T coconut aminos

Instructions
  1. Fill a medium pot with water and bring it to a boil. Once the water is boiling, add the green beans and boil for 5 -6 minutes. The beans should be tender. Immediately remove the beans from the heat, drain the liquid, and place them in an ice bath.
  2. In a large sauté pan, add the bacon and cook it until it’s crispy, stirring often to keep it from burning. Using a slotted spoon, remove the crispy bacon from the pan and set it aside
  3. Drain the bacon fat from the pan, leaving 1-2 tablespoons in the pan. Turn the heat to low and add the garlic. Sauté for about 30 seconds.
  4. Add the green beans, coconut aminos, sea salt, and pepper. Continue sautéing for 2-3 minutes, frequently stirring until the beans are hot.
  5. Top the beans with the bacon and serve.
