This halibut recipe is finished with a dairy-free garlic cream sauce that you can’t even tell is dairy-free. If you think that you hate fennel because of fennel seeds, roasted fennel bulbs taste nothing like the seed. Give them a try, you will probably be surprised by how much you enjoy them. Halibut is a delicate fish. For this recipe, it is pan-seared so I recommend using a nonstick skillet to ensure the halibut fillets stay in one piece.
