Ham & Jam Sandwiches

We lived in a small town in Missouri for about 3 years. They have the cutest farm-to-table café there called Café Blackadder, and I loved eating there. My favorite sandwich was their ham & jam. When we drive through Missouri or return to visit friends who live there, I have to eat at Café Blackadder, and I always order the ham & jam. This is my version of their sandwich I love so much.

Ham & Jam Sandwiches

Ham, swiss cheese, greens, apple, and a red onion marmalade are sandwiched between two pieces of gluten-free bread and toasted. It's the best sandwich!

Ingredients

Ham & Jam Sandwich

  • 8 slices gluten-free bread or Paleo bread of choice (I used Canyon Bakehouse)
  • 2 T mayonnaise (homemade or Primal Kitchen)
  • 1/2 apple, sliced into 1/8 inch thick pieces
  • 2 C spring mix
  • 1 lb. thinly sliced ham
  • 4 slices swiss cheese
  • red onion marmalade (recipe below)

Red Onion Marmalade

  • 1 T avocado oil
  • 1/2 T grass-fed butter
  • 1 large red onion, thinly sliced
  • 2 T coconut sugar
  • 1/2 C dry red wine
  • 2 T balsamic vinegar
  • 1/2 tsp sea salt

Instructions
  1. Heat the avocado oil and butter in a medium saucepan on medium-low heat.
  2. Once the butter is melted, add the onions and coconut sugar. Stir to combine everything and continue cooking until the onions begin to caramelize for about 15 minutes. To keep from burning, be sure to stir the onion mixture often.
  3. Stir in red wine and balsamic vinegar. Simmer the mixture until most of the liquid has evaporated, about 15-20 minutes. Stir in the sea salt.
  4. Remove the pan from the heat and set it aside.
  5. Preheat the oven to 400 degrees. Place 8 slices of bread on a sheet pan.
  6. On 4 slices of bread, spread 1/2 tablespoon of mayonnaise. Divide the ham evenly into 4 portions and add on top of the mayonnaise. On top of each piece of bread that has the ham, add one slice of swiss cheese.
  7. Evenly divide the red onion marmalade between the 4 remaining slices of bread that do not have any toppings yet and spread evenly. Top the marmalade with the apple slices.
  8. Place the sheet pan with the 8 bread slices in the oven and bake for 7 minutes. The cheese should be melted, and the apples softened when they come out of the oven.
  9. Add 1/2 cup of spring mix to the sides of the sandwich with the marmalade and apple. Place the slices of bread with the ham and cheese on top of the bread with the spring mix.
  10. Slice the sandwiches in half and serve.
