Mediterranean Inspired Chicken Patties with Tzatziki

I created these chicken patties for my Whole30 recipes Instagram takeover, and they were so good that I knew I needed to make a permanent place on the blog for them.

The ground chicken mixed with the sundried tomatoes, kalamata olives, and herbs makes an easy and fun protein for summer. They work great for meal prep and are a crowd pleaser if you're having a backyard gathering.

When making the tzatziki, be sure to check the labels on the sour cream and yogurt if you're on a round of Whole30. Culina is an excellent dairy-free yogurt option, and Forager is what I used for the dairy-free sour cream.

Ingredients

Chicken Patties

  • 2 lbs ground chicken
  • 1/2 C sun-dried tomatoes, roughly chopped
  • 1/2 C kalamata olives, roughly chopped
  • 1/3 C minced red onion
  • 1/4 C fresh basil, roughly chopped
  • 2 tsp minced fresh oregano
  • 6 galrlic cloves, minced
  • 1 tsp sea salt
  • 1/2 tsp black pepper

Tzatziki

  • 1/2 C dairy-free yogurt
  • 1/2 C dairy-free sour cream
  • 2 garlic cloves, minced
  • 1/2 C cucumber, seeds removed and small dice
  • 1 T fresh dill, minced
  • 1 tsp white wine vinegar
  • 1/2 tsp sea salt
Instructions
  1. In a small bowl, add the dairy-free yogurt, dairy-free sour cream, 2 minced garlic cloves, cucumber, dill, white wine vinegar, and ½ teaspoon sea salt. Mix everything to combine and set aside while preparing the chicken patties.
  2. In a large bowl, add the ground chicken, sun-dried tomatoes, kalamata olives, red onion, basil, oregano, 6 minced garlic cloves, 1 teaspoon sea salt, and pepper. Mix everything thoroughly.
  3. Use a spring-loaded large ice cream scoop to form balls of the chicken mixture and place them on a piece of wax paper. Use a rubber spatula to flatten the balls into patties.
  4. Grill the patties for about 3-5 minutes on each side. The chicken should be cooked and no longer pink when done.
  5. Serve the chicken patties with the tzatziki, leaf lettuce, diced tomatoes, and cucumbers.

*The chicken mixture may be sticky. To keep it from sticking to the rubber spatula, spray the spatula with avocado oil before using it to flatten the mixture into patties.
