To say I am pumpkin obsessed, might be an understatement. As soon as a hint of fall appears, I am pumpkin spice everything. For these muffins, I used Kite Hill dairy-free cream cheese. They came out a little denser than your typical muffin that contains gluten, but the texture is perfect. They are moist and very flavorful. I added pepitas around the cream cheese dollop for a crunch.
This delicious pumpkin muffin is Paleo friendly and uses almond milk cream cheese. They are the perfect fall treat.
