Sweet & Sour Turkey Meatballs

Growing up, one of my favorite dishes my mom would make was sweet and sour meatballs. The sweet and sour sauce is still one of my favorite sauces. I decided I needed to make a paleo/Whole30 version and it came out perfect. I used pineapple juice to supply the sweetness. I tested the recipe baking the meatballs in the oven and cooking them in the air fryer and have included instructions for both.

Sweet & Sour Turkey Meatballs

These meatballs can be made in the oven or the air fryer, and the sweet and sour sauce uses pineapple juice to sweeten it. This recipe is Whole30 and Paleo compatible.

Ingredients
  • 2 lbs. ground turkey
  • 4 garlic cloves, minced
  • 1 small yellow onion, small dice
  • 1 tsp sea salt
  • 2 bell peppers, large dice
  • 1- 20oz can pineapple chunks, juice drained
  • 2 C pineapple juice
  • 3 T coconut aminos
  • 2 T ketchup (sugar-free)
  • 1 T tapioca flour
  • 1 T avocado oil
  • 1 T white wine vinegar
  • 1 tsp water

Instructions
  1. In a medium bowl thoroughly mix the ground turkey, garlic, onion, and sea salt.
  2. Use a spring-loaded ice cream scoop to form balls from the turkey mixture.
  3. To bake in the oven- preheat to 400 degrees. Line a baking sheet with parchment paper and place the meatballs evenly spaced on the pan. Bake in the oven for 17-20 minutes.
  4. To bake in the air fryer- place the meatballs in the basket and bake at 370 degrees for 8-10 minutes.
  5. In a large sauté pan on medium heat, add the avocado oil. Once the oil is hot, add the bell peppers and cook for 3-5 minutes.
  6. Add the pineapple juice, coconut aminos, ketchup, and white wine vinegar and bring the mixture to a boil.
  7. In a small dish whisk the tapioca flour and water together. Slowly whisk the tapioca flour mixture into the sauce and continue simmering until the sauce thickens.
  8. Add in the pineapple and cooked meatballs. Simmer for an additional to 3-5 minutes. Serve with cauliflower rice.
