Truffle Green Beans with Hazelnuts

Lately, I have really enjoyed finding different ways to liven up vegetables. I love veggies, but I need them to have the flavor or some sort of dipping sauce to enjoy them. These green beans turned out really well. The caramelized shallots with the truffle oil and hazelnuts made my taste buds perk right up. If you can’t find truffle oil, this recipe is still delicious without it.

Truffle Green Beans with Hazelnuts

Truffles and green beans do I need to say much more!? This is a fun Whole30 and Paleo compatible dish to liven up your vegetable side dishes.

Ingredients
  • 4 C green beans
  • 2 shallots, thinly sliced
  • 1 T ghee
  • 3 garlic cloves, minced
  • 1/2 lemon, zested
  • 1/2 tsp lemon juice
  • 1/4 C hazelnuts, toasted and roughly chopped
  • 1/2 tsp sea salt
  • black truffle oil

Instructions
  1. Fill a medium pot with water and bring it to a boil. Once the water is boiling, add the green beans to the pot. Boil for about 5 minutes. Immediately remove the green beans and place them in an ice bath. Set aside.
  2. In a large sauté pan on medium heat, add the ghee and shallots. Continue cooking, stirring occasionally, until the shallots caramelize. This should take about 5-7 minutes.
  3. Add garlic and sauté for another minute, being careful to not burn the garlic. Add the green beans, sea salt, lemon zest, and lemon juice. Sauté for an additional 3-5 minutes.
  4. Remove the pan from the heat and finish with drizzling truffle oil over the green beans and sprinkling the toasted hazelnuts on top. Serve immediately.
