Cinnamon Raisin Cookie Collagen Balls

I have been on a collagen ball kick lately. They just seem to be the perfect little snack- healthy fats, a little bit of sweet, the right size, and of course all the benefits from the collagen peptides. This version is sweetened with dates and tastes similar to an oatmeal cookie. Store these in the refrigerator.

Cinnamon Raisin Cookie Collagen Balls

These snack balls taste similar to an oatmeal cookie and make a great snack option. They are Paleo, gluten-free, and contain collagen peptides for added protein.

Ingredients
  • 8 dates, pitted
  • 1 C almond butter, no salt added
  • 1 T vanilla extract
  • 2 scoops collagen peptides
  • 1/4 C unsweetened shredded coconut
  • 1/2 tsp cinnamon
  • 1 tsp sea salt
  • 1/4 C raisins
  • 1 T chia seeds
  • 1 T coconut oil

Instructions
  1. In a food processor add the dates and blend until a paste forms.
  2. Add the almond butter, vanilla, cinnamon, sea salt, collagen peptides, coconut oil, and chia seeds. Blend until everything is thoroughly combined.
  3. Scrape the mixture into a medium bowl and add the shredded coconut and raisins. Using a rubber spatula, mix everything together until the coconut and raisins are evenly distributed  throughout the mixture.
  4. Use a spring-loaded cookie scoop to form balls of the mixture. Roll them in your hands to make them smooth. Continue this process until all the mixture has been formed into balls.
  5. Enjoy right away and store any extra in the refrigerator.
