Ingredients
  • 1/8 lb Canadian Style Bacon (about 3-4 slices), small dice
  • 4 oz goat cheese
  • 1 garlic clove, minced
  • 2 tsp fresh thyme
  • 1 green onion, minced
  • 8 oz whole white mushrooms
  • 1/4 tsp sea salt
Instructions
  1. Preheat the oven to 350 degrees.
  2. Clean mushroom caps with the damp paper towel, gently rubbing off any dirt.
  3. Carefully remove the mushroom stems.
  4. In a small bowl, add the goat cheese, minced garlic, thyme, green onion, Canadian-style bacon, and sea salt.
  5. Using a spoon, mix the ingredients until well combined.
  6. Scoop the cheese mixture into the mushroom caps. Repeat until all the caps are full. The mixture will be slightly raised out of the mushroom caps.
  7. Place the stuffed mushrooms on a parchment-lined baking sheet, cheese side up, and bake for 25-30 minutes.
  8. The mushrooms should be cooked, and the cheese mixture slightly browned when done. Enjoy!
