Coconut Green Beans

This green bean recipe comes together quickly and is a side dish that will pair well with anything. The green beans are blanched and then sautéed with coconut flakes, garlic, coconut aminos, and cilantro. When you are in a hurry but still want to ensure you are getting a vegetable with your meal, this is the perfect recipe. Minimal ingredients but still flavorful.

Coconut Green Beans

These green beans have a garlic coconut amino glaze and are sprinkled with toasted coconut. This side dish is Whole30 and Paleo compatible.

Ingredients
  • 12oz green beans
  • 1/2 C coconut flakes, unsweetened
  • 4 garlic cloves, minced
  • 1/4 C roughly chopped cilantro
  • 1 tsp sea salt
  • 1 T coconut aminos
  • 2 T ghee

Instructions
  1. Fill a medium pot with water and bring it to a boil. Once the water is boiling, add the green beans to the pot. Boil for about 5 minutes. Immediately remove the green beans and place them in an ice bath. Set aside.
  2. In a large sauté pan on medium-low heat, add ghee, garlic, and coconut flakes. Sauté for 2-3 minutes. The garlic should be fragrant, and the coconut toasted.
  3. Add the green beans, sea salt, cilantro, and coconut aminos. Mix everything together and continue cooking an additional 3-4 minutes, until the green beans are hot.
  4. Remove from the heat and serve as a side dish to any meal.
