Creamy Coconut Chocolate Chip Bites

These coconut bites are made creamy with the help of coconut butter. They melt in your mouth and remind me of a creamier mounds bar. They are sweetened with maple syrup and honey and they also contain collagen peptides. These are best stored and enjoyed at room temperature.

Creamy Coconut Chocolate Chip Bites

These little coconut chocolate bites are creamy, sweet, and a touch of salty. They are paleo and refined sugar-free.

Ingredients
  • 3/4 C coconut butter
  • 2 T honey
  • 2 T maple syrup
  • 2 scoops collagen peptides
  • 3/4 C unsweetened shredded coconut
  • 2 T almond flour
  • 1/2 tsp sea salt
  • 1/4 C chocolate chips (I used Enjoy Life mini chips)

Instructions
  1. Heat the coconut butter in the microwave for 30 seconds to soften it up. In a medium mixing bowl, add all the above ingredients. Use a rubber spatula to mix everything until it’s thoroughly combined.
  2. Use a spring- loaded cookie scoop to form balls of the mixture. Roll them in your hands to make them smooth.
  3. Enjoy right away and store any extra at room temperature.
