Garlic, Bacon, & Tomato Pasta

This pasta is super simple and comes together quickly. I used Palmini angel hair hearts of palm pasta, and you won’t miss regular noodles. I recommend boiling them for a few minutes to lessen the flavor and soften them a bit for this dish. I also recommend using high-quality olive oil because that is the flavor base for the dish. Add chicken or shrimp to this meal or use it as a side dish when grilling steaks and chicken.

Garlic, Bacon, & Tomato Pasta

This recipe uses hearts of palm noodles, olive oil, and bacon to make an easy delicious dish. It's also Whole30 and Paleo compatible.

Ingredients
  • 2-12oz hearts of palm angel hair noodles (I used Palmini), drained and rinsed
  • 1/2 C olive oil (high quality)
  • 8-10 garlic cloves, thinly sliced
  • 2 T capers
  • 5 pieces bacon
  • 10oz cherry tomatoes
  • 1/4 C fresh basil, chiffonade
  • 1 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1 T lemon juice

Instructions
  1. Cook the bacon until crispy*, roughly chop it, and set it aside.
  2. Fill a medium pot with water and bring to a boil. Add the drained and rinsed hearts of palm noodles and boil for about 5-7 minutes. Drain and set the noodles aside.
  3. In a large skillet on medium-low heat, add olive oil and garlic. Sauté the garlic until it is soft and slightly brown but not burnt, about 2-3 minutes.
  4. Add the capers, tomatoes, lemon juice, sea salt, and pepper. Sauté 2-3 minutes.
  5. Toss in the pasta and crumbled bacon. Continue cooking for 4-5 minutes. Remove the pan from the heat.
  6. Add the basil and stir to combine everything thoroughly.
  7. Serve in bowls.

*Bacon can be cooked in the air fryer, oven, or in a pan on the stovetop.
