Glazed Mixed Nuts

Nuts are a great snack option to keep on hand and this version is Whole30 compatible. They are roasted in a coconut amino glaze that gives the nuts a sweet and salty flavor. I used pecans, walnuts, and cashews in the recipe, but any nut you love will work.  Be sure not to burn the nuts because the glaze will become bitter.

Mixed nuts are a great way to get healthy fats in. These are tossed in a coconut amino glaze before they are roasted, which gives them a sweet and salty flavor.

Ingredients
  • 1 1/3 C raw pecans
  • 1 1/3 C raw cashews
  • 1 1/3 C raw walnuts
  • 3/4 C coconut aminos
  • 2 T apple cider vinegar
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder

Instructions
  1. Preheat the oven to 350 degrees and line a sheet pan with parchment paper.
  2. In a small pot add the coconut aminos, apple cider vinegar, garlic powder, and onion powder. Bring the mixture to a bowl and reduce for about 8-10 minutes. The mixture should coat the back of a spoon when it's done, and about 1/2 cup of liquid will remain.
  3. In a medium bowl, combine the pecans, walnuts, cashews, and reduced coconut amino mixture. Toss the nuts in the bowl to evenly coat them with the glaze. Spread the nuts in a single layer on the parchment-lined sheet pan.
  4. Place in the oven and bake for 10 minutes. Remove the sheet pan from the oven and stir the nuts around to coat once again. Place the pan back in the oven and continue roasting for 7-8 more minutes. Remove from the oven and set aside.
  5. Let the nuts cool. Break them apart and serve or store them in an airtight container for up to 3 weeks.
