Green Beans with Pancetta & Figs

Sometimes you just need a recipe to get you excited about vegetables again. This recipe did that for me. The saltiness of the pancetta mixed with the sweetness of the dried figs pairs perfectly with the green beans. This recipe will impress your guests but it easy enough to make on any weeknight.

Green Beans with Pancetta & Figs

Having a side dish that isn't boring is important when trying to get your veggies in every day. This dish has so much flavor and is very easy to make. It's Whole30 and Paleo compatible.

Ingredients
  • 4oz pancetta, diced
  • 4 C green beans
  • 1/2 C dried figs, quartered
  • 3 T slivered almonds, toasted
  • 3/4 tsp sea salt

Instructions
  1. Fill a medium pot with water and bring it to a boil. Once the water is boiling, add the green beans to the pot. Boil for about 5 minutes. Immediately remove the green beans and place them in an ice bath. Set aside.
  2. In a large sauté pan on medium heat, add the pancetta and cook until its crispy. The time will vary depending on the thickness of your pancetta.
  3. Add the green beans, dried figs, and sea salt. Toss everything together and continue cooking until the green beans are hot. This should take about 5-7 minutes.
  4. Sprinkle the toasted almonds on top and serve.
