Honey Garlic Chicken Thighs

I know I say this a lot, but this chicken is so flavorful and easy! It takes a little bit of planning ahead because the chicken thighs need to marinate overnight. The marinade takes about 5 minutes to put together, and it’s all stored in one dish, so the next day, the dish just needs to be placed in the oven to cook. This makes a great Sunday meal prep recipe because the chicken goes well with any side dish and is an excellent protein option for the week.

Honey Garlic Chicken Thighs

These chicken thighs make a great meal prep protein and pair well with any side dish. They are paleo and AIP compatible.

Ingredients
  • 2 lbs skinless chicken thighs
  • 1/2 small yellow onion, minced
  • 5 garlic cloves, minced
  • 3 T honey
  • 1/4 C coconut aminos
  • 1/2 tsp sea salt
Instructions
  1. In a small bowl, whisk the minced onion, garlic, honey, coconut aminos, and sea salt.
  2. Place the chicken thighs in a baking dish in a single layer and pour the marinade over the top. Move the chicken thighs around to coat them in the marinade thoroughly. Cover the dish and place it in the fridge for 24 hours.
  3. After the chicken has marinated, preheat the oven to 425 degrees. Uncover the baking dish and place it in the oven. Cook the chicken for 20-15 minutes. The chicken shouldn’t be pink anymore when it is fully cooked.
  4. Serve with your favorite vegetable. I like it with air-fried asparagus.
