Instant Pot Braised Beef & Noodles

The Instant Pot can be a wonderful tool to get a meal made quickly that would normally take hours to complete. For this braised beef, do not skip the step of searing the roast. It will add an additional layer of flavor that can’t be replicated. I used hearts of palm noodles. This is a perfect dish for the winter when you are craving comfort food.

Instant Pot Braised Beef & Noodles

This Instant Pot meal requires few ingredients but is full of flavor and delicious. It's also Whole30 and Paleo compatible.

Ingredients
  • 2 T avocado oil
  • 1/4 C tapioca flour
  • 3 lb. boneless chuck roast
  • 2 tsp sea salt
  • 1 tsp pepper
  • 4 C beef broth
  • 8 garlic cloves, minced
  • 3/4 C dry red wine (omit on Whole30)
  • 2 tsp dry thyme
  • 2 T coconut aminos
  • 2-12oz packages hearts of palm noodles, drained and rinsed

Instructions
  1. Sprinkle the salt and pepper over the entire roast.
  2. Add the avocado oil to the Instant Pot and set it to sauté. Once the Instant Pot is hot, sear all sides of the roast.
  3. Deglaze the pot with the red wine. (Skip this step if you are completing a Whole30. Use some of the beef broth to deglaze.) Sprinkle the tapioca flour over the roast and bottom of the pot. Add the beef broth, coconut aminos, garlic, and thyme.
  4. Lock the Instant Pot lid in place and set it to pressure cook on high for 1 hour.
  5. Manually release the pressure and shred the beef roast. Add the hearts of palm noodles and mix everything together.
  6. Serve in bowls and enjoy!
