Jalapeno Popper Smashed Potatoes with Ranch

These little potatoes make the perfect snack or appetizer. They are easy to make and reheat well. My husband is a very picky eater, and doesn't like cheese, but he enjoyed these potatoes.

Jalapeno Popper Smashed Potatoes with Ranch

These potatoes are easy to make but very flavorful and delicious. You will want to make these for all your gatherings, not just the Super Bowl. If you like heat, don’t be afraid to add 2-3 slices of jalapeno to each potato.

Ingredients
  • 1 lb baby potatoes
  • 1 T + 1 tsp sea salt
  • 1 jalapeno, thinly sliced
  • 7 bacon strips, cooked
  • 2 C shredded cheddar cheese

Ranch Dressing

Instructions
  1. Preheat the oven to 400 degrees.
  2. Bring a pot of water and 1 tablespoon of sea salt to a boil. Add the potatoes and cook until they are fork-tender, about 20-25 minutes. Drain the potatoes and let them dry off.
  3. Oil a baking sheet and add the potatoes. Smash them with a jar or measuring cup.
  4. After the potatoes have been smashed, sprinkle them with ½ teaspoon of sea salt and top with the shredded cheese, thinly sliced jalapeños, and chopped bacon.
  5. Place in the oven to bake for 25-30 minutes or until the cheese is melted and the potato is golden around the edges.
  6. While the smashed potatoes cook, make the ranch by whisking together the Primal Palate Garden Ranch seasoning, sour cream, and mayonnaise.
  7. Serve the potatoes with the ranch.
