Keema Beef Curry

How do you feel about curry? I think I could eat curry every single day. There are so many different types and flavor profiles. You can add an endless amount of vegetables and constantly switch up the protein. Curry is a one-pan meal that makes me happy. This recipe is my spin on traditional Indian curry and I used sweet potato in this, but feel free to substitute white potato if you prefer.

Keema Beef Curry

This one-pan dish originated from India and traditionally contained minced meat. This version is Whole30 and Paleo compatible.

Ingredients
  • 1 lb. ground beef
  • 1/2 small yellow onion, small dice
  • 5 garlic cloves, minced
  • 1 1/2 T minced ginger root
  • 1 small sweet potato, 1/2 inch dice
  • 1 T curry powder
  • 1 1/2 C full fat coconut milk
  • 1-14.5oz can diced tomatoes, drained
  • 1 1/2 tsp sea salt
  • 2 T avocado oil
  • cilantro, roughly chopped

Instructions
  1. In a large sauté pan on medium heat, add the avocado oil. When the pan is hot add the onion, garlic, and ginger. Sauté for about 2-4 minutes, the onion should be translucent, and the mixture should be fragrant.
  2. Add the beef and break it up into small pieces. Continue cooking until the beef is no longer pink.
  3. Add the tomatoes, coconut milk, sweet potato, curry powder, and sea salt. Stir to combine everything and turn the heat to low. Simmer the curry for 15-20 minutes, stirring occasionally. The sweet potato should be tender when the curry is done simmering.
  4. Sprinkle the cilantro on top and serve.
