Lemon Air Fryer Zucchini & Squash

I’ve been playing around with the air fryer, trying to come up with different recipes you can cook with it. Proteins and French fries are perfect in there, but vegetables work too. This recipe is flavorful with simple ingredients most people have in their homes.

Lemon Air Fryer Zucchini & Squash

This air fryer side dish is Whole30 and Paleo compatible and comes together quickly. It's flavorful and pairs great with any main dish.

Ingredients
  • 1 small zucchini, cut in half, and then 1/4 inch thick slices
  • 1 small yellow squash, cut in half, and then 1/4 inch thick slices
  • 1/4 small yellow onion, thinly sliced
  • 3 garlic cloves, minced
  • 1 T lemon juice
  • 2 tsp ghee, melted
  • 1/2 tsp sea salt
  • 1/4 tsp cracked black pepper
  • 1/2 tsp Italian seasoning

Instructions
  1. In a medium bowl, toss all the ingredients together. Mix well so all the ingredients are evenly seasoned.
  2. Place the squash and zucchini mixture in the basket of the air fryer and set the temperature to 400 degrees.
  3. Cook the vegetable mixture for 15-20 minutes, stirring everything about halfway through.
  4. Serve as a side dish to any meal.
